Ingredients:

  • 1 lb dried beans (such as black, pinto, or navy beans), soaked overnight
  • 4 cups beer
  • 1 smoked ham hock or 1 cup diced smoked ham
  • 1 chorizo sausage, sliced
  • 1 pork sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions:

  1. Drain the soaked beans and rinse them well.
  2. In a large pot, heat the olive oil over medium-high heat. Add the sliced chorizo and pork sausage, and cook until browned. Remove the sausage from the pot and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic, smoked paprika, and cumin, and cook for another 1-2 minutes.
  4. Add the soaked beans, water, smoked ham hock or diced smoked ham, bay leaf, and some salt and pepper to the pot. Stir everything together and bring to a boil.
  5. Reduce the heat to low and let the beans simmer for 1 1/2 to 2 hours, or until the beans are tender and the liquid has thickened to a stew-like consistency.
  6. Remove the ham hock (if using) and shred the meat. Return the shredded meat and the cooked sausage to the pot.
  7. Taste and adjust the seasoning as needed. Garnish with chopped parsley or cilantro and serve hot.
