Here is my version of the best venison stew recipe:
- your favorite cut of venison
- olive oil
- onions
- garlic
- Italian seasoning
- salt & pepper
- bay leaf
- chili paste (I used Aji Panca in this recipe)
- potatoes
- add whatever vegetables you like
- beef stock
- red wine
Get a good sear on the outside of the meat first, either in a pan or on the grill. Once onions and garlic are sautéed in a dutch oven, add the venison to the pot and add liquids. Cook for at least an hour, then when the meat is falling apart, shred it with a fork or chop up the meat.
